Spaghetti Carbonara

    Spaghetti Carbonara

    Ingredients

    • 200g spaghetti
    • 100g pancetta
    • 2 large eggs
    • 50g pecorino cheese, grated
    • 50g parmesan cheese, grated
    • Freshly ground black pepper
    • Salt

    Instructions

    1. Cook the spaghetti in a large pot of salted boiling water until al dente.
    2. Meanwhile, heat a large skillet and cook the pancetta until crispy.
    3. In a bowl, whisk together the eggs, pecorino, and parmesan cheese.
    4. Reserve a cup of pasta water, then drain the spaghetti.
    5. Add the spaghetti to the skillet with pancetta, and toss to combine.
    6. Remove the skillet from heat and quickly stir in the egg and cheese mixture.
    7. Add reserved pasta water as needed to create a creamy sauce.
    8. Season with freshly ground black pepper and serve immediately.
